Try Zucchini Noodles with Creamy Avocado Pesto Sauce with your Spiralizer
As you guys know, I bought a spiralizer last week and I have now had the pleasure of using it twice now. With that being said, I’m bringing you guys an easy and on the budget receipe that uses this tool.
Zucchini Noodles with Creamy Avocado Pesto
Ingredients:
- 6 Large Zucchini
- 2 Ripe Avocados
- 1 cup of fresh basil leaves
- 3 cloves of garlic
- 2 Tbsp of Lemon Juice
- 1 Tbsp of Olive Oil
Instructions:
1. Begin my spiraling your zucchini. It’s tricky at first,but once you get it, you’ll see how easy it is to use.
2. Then, in a bowl mash your avocados for the sauce. You can use a blender or food processor if you choose for a smoother sauce. Then, though in the basil leaves, lemon, and a little salt and pepper for taste.
3. Now you’re ready to cook the pasta. Drizzle a few drops of olive oil in a large skillet and then add zucchini for 2-4 minutes or until tender.
4. Once the noodles are done, move them to a bowl and toss in the avocado pesto sauce. At this time, you can add salt, pepper, and a little parmesan if you choose.

Overall, a spiralizer is not only a reasonable price but a great tool for pasta and a easy way to cut up veggies. With the cold weather fast approaching, this meal will help keep you warm, while eating healthy. Until next time…
