Welcome back!

It has been a crazy week…two essays due.. reading three different novels in three different classes, blog post, washing clothes, two dogs.. blah..blah..blah, I can go on forever. Coffee has been my best friend…no milk as you all know. As the week approaches, I will say, l feel very productive. Enough about me, lets get to 
“Spicing Up the Veggies."


For those of you new to the vegan lifestyle, I know you're probably getting tired of salads and smoothies, so this week I bring you an exciting meal...Vegetable Stir fry with Thai noodles!

I've made stir fry many times but instead of serving with rice, I decided to spice it up with some noodles. Not only does Stir fry offer a full plate of colors, but plenty of nutrients as well. This meal is super easy to make, with prepping and cooking, you're looking at a maximum of 25 minutes! 

Ingredients:

- 2 tablespoons of sunflower oil
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 red onion
- 1 head of broccoli, cut into florets
- 1/2 cup of snow peas
- 1 box of Thai noodles
- 1/2 cup teriyaki sauce

Directions:

Begin by slicing up your vegetables and putting 4 quarts of water on the fire to boil. Feel free to substitute or double up on vegetables,if you're looking for this meal to last a few days. Of course, I season my veggies with  kosher salt, pepper, garlic, etc, but I'll leave you to season your veggies as you like.

Once you've finished prepping, place your skillet on the stove with two tablespoons of sunflower oil to heat up.
**p.s., you can use any oil, however, I love sunflower oil because it doesn't change when heated.

Now, go ahead and throw your peppers, onions, snow peas, and broccoli into your skillet, by this time, the water for the Thai noodles should be boiling too, so you can throw them in the next pot. Be sure to pay close attention to the directions on the box of Thai noodles, you don't want them too mushy.

Typically, your veggies should be ready in 4-5 minutes.Then, you're ready to serve!😋😋😋😋

Notes:
* You can add other veggies(eggplant,squash, cauliflower, etc.) if you prefer, these are just some of my favorite that I love to have in my stir-fry
* If you're thriving for a meal that's heavier, throw in some tofu! There's so many different kinds, that's well seasoned. If you haven't tried it, I recommend you do! Plus, tofu is a great source of protein!
* If you're still hungry, have a side salad, you can't go wrong with that.



And now, I'll leave you with some tips! I know many may struggle with what to snack on, that’s both vegan and healthy! Potatoes chips, pretzels, and candy may be the snacks in the grocery aisle but there's always alternatives. When you’re looking for a snack between classes or while at your desk, reach for nuts, crackers, fresh fruit or veggies. And I know after a while, it becomes bland but you can always freeze some fruit or grab hummus for your veggies for something a little different. Yes, I prep and package my own snacks, it requires a little time but saves $$$$$$.
